Delicious Muffins
Ingredients
- 1 cup whole-wheat flour
- 1 cup oat bran
- 1 tablespoon cornstarch
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon all-spice
- teaspoon cinnamon
- 2/3 cup grated carrots
- 1/3 cup maple or agave syrup
- 1 cup water
- cup coconut oil
Instructions
- Preheat the oven to 375oF.
- In a large mixing bowl, combine all of the dry ingredients (flour through cinnamon) and the grated carrots.
- Add all of the wet ingredients, maple syrup through oil. Mix well.
- Pour the batter into a lightly oiled muffin pan and bake for 25 to 30 minutes, or until an inserted toothpick comes out clean.
