Delicious Salad With Potatoes
Ingredients:
  • 2 medium potatoes, peeled and cut into 1/2-inch cubes
  • 1 hard boiled egg, sliced
  • 1/4 cup bell pepper, chopped
  • 1/4 cup onion, chopped
  • 2 tablespoons mustard
  • 4 tablespoons light or vegan mayonesse 
Instructions:
  1. Cook the potatoes in boiling water for 8 to 10 minutes until tender but still firm. (Be careful not to overcook.)
  2. Drain and cool. Mix all ingredients together and chill before serving.
