LENTIL CONFETTI SALAD

Ingredients
  • lb. (1 cup) lentils
  • 1 cups water
  • 1 tsp. salt
  • 1 cup cooked brown rice
  • cup Italian dressing
  • cup tomatoes, diced
  • cup chopped green pepper
  • 2 Tbsp. chopped onion
  • Chopped parsley
Instructions
  1. Wash and drain lentils.
  2. Bring lentils and salted water to a boil.
  3. Simmer, covered, for about 20 minutes. Do not overcook—lentils should be tender with skin intact.
  4. Drain immediately.
  5. Combine with cooked rice, pour dressing over rice and lentils and refrigerate until cool.
  6. Add remaining ingredients except parsley; mix well.
  7. Garnish with parsley before serving.
